I can tell you as a person who is working in restaurant . The salary is too low for the position of Manager . Basically your manager has to do job of Flour supervisor , Head Bartender , I am not talking about "marketing" and some other stuff you mentioned ( which is not Manager`s responsibilities at all .
Anyway , wish you to find right person !
